Sausage filling assembly comprises a continual length of empty sausage skin which has external marks at fixed intervals and is reefed onto a mincemeat feed tube with a circlip at the discharge point. Following discharge of filling, the sausage advances and a further length of reefed skin is withdrawn until the next mark is detected by a sensor. The tail of the previous sausage is then closed by a clip. Sausage filling assembly to make sausages comprises a continual length of empty sausage skin which has external marks (3) at fixed intervals and is reefed (4a) onto a mincemeat feed tube (1) with a circlip (16) at the discharge point. Following discharge of a weight-determined portion of filling, the sausage (12) advances and a further length of reefed skin (4a) is withdrawn until the next mark (3) is detected by a sensor. The tail of the previous sausage is then closed by a clip (11). An independent claim is also included for an assembly with a filling tube and a unit which smooths the sausage skin over the filling tube. The assembly further has a sausage advancement grip located after the tube and circlip, and which prevents back-filling of an empty section of skin. A cutter detaches full sausages. Sausage weight is measured indirectly by a non-contact sensor. A sensor detects the sausage skin advancement.
