Process for the isolation of glucan from yeast

Method for isolating glucan from yeast comprises: (a) treating yeast with an alkaline, surfactant-containing solution (I); (b) contacting the resulting solid glucan-containing residue with an alcohol to isolate the glucan, and (c) drying the glucan. (I) is an aqueous solution containing ≥ 1 alkali metal hydroxide and/or alkaline earth metal hydroxide and 0.05-3 wt.% of surfactant.
