PROBLEM TO BE SOLVED: To provide the subject improver excellent in the ability to loosen noodles, and to provide a method for producing the improver. SOLUTION: This noodle-loosening improver is such one as to comprise as active ingredients a water-soluble polysaccharide and an enzymolysis product of protein. The other object method for producing the improver comprises treating a water-soluble polysaccharide extract, when the water-soluble polysaccharide are extracted, with a protein-splitting enzyme to effect enzymolysis of the protein mixed in the extract to mix the enzymolysis product of protein into the water-soluble polysaccharide. |
