PROBLEM TO BE SOLVED: To obtain a new mold-releasing agent for formation capable of improving qualities without impairing flavor of boiled rice when a formed body of boiled rice such as a rice ball, etc., is produced by a forming machine. SOLUTION: This mold-releasing agent for formation comprises an edible water-soluble liquid thickener such as a sugar alcohol, e.g., sorbitol, maltitol, starch-reducing sugar, etc., an oligosaccharide or a polysaccharide as an active ingredient. The mold-releasing agent further may contain a bacteriostatic agent such as ethanol, acetic acid, etc., alone or a combination of the bacteriostatic agent and seasoning. |
