PROBLEM TO BE SOLVED: To provide the subject method, aiming at changing the flavor of soy sauce without changing the taste of soy sauce, in view of the fact that the flavor and taste of soy sauce are changed owing to heating soy sauce when heat distillation is done through heating soy sauce to separate soy sauce ingredients from one another. SOLUTION: The subject equipment is designed in such a scheme that a feed pipe 4 is connected with a treatment tank 1 through a feeder 3 from a stock soy sauce tank 2 for storing stock soy sauce, the feed pipe 4 is connected to an atomization vessel 5 installed on the upper part of the treatment tank 1, an ultrasonic oscillator 7 to which oscillation output is supplied from an oscillation device 6 is installed in the atomization vessel 5, a discharge pipe 9 equipped with a discharge device 8 is installed in the atomization vessel 5, a liquefaction collector 10 is installed on the lower part of the treatment tank 1, a power source unit 11 is connected with the liquefaction collector 10, a collection vessel 12 is installed on the lower part of the liquefaction collector 10, and a discharge pipe 14 equipped with a discharge device 13 is installed in the collection vessel 12. |
