Method for preparing citric acid from molasses. It consists of fermentingmolasses with Aspergillus niger culture in a nutrient medium comprising ureaand diammonium phosphate in the presence of sodium ferrocyanide, at atemperature of 30 to 40 degrees C, in a left scale fermenting tank. Themethod is characterised in that a sucrose solution containing a sucroseconcentration to 600 to 650 gpl is introduced into the large-scale fermentingtank at a pH of 2.6 to 2.7 and the pH of the large-scale fermenting tank ismaintained at a value of 5.1 to 2.64 in a progressive manner and sodiumferrocyanide is added to the large-scale fermenting tank in the form of anincreasing number of batches, all the batches being added at predeterminedstages of ageing of the large-scale fermenting tank. |
