PURPOSE: A method for preparing flavored and steamed glutinous rice by using a bamboo tube soaked in herb extract is provided to serve nutritious steamed rice having high palatability and containing the herb extract and active elements of the bamboo. CONSTITUTION: The method includes the following steps of: (i) getting herb extract by heating 5-7% of and 10-15% of with water of 10-15times at 80-120deg.C for 1-3hr and filtrating the mixture; (ii) soaking a bamboo tube (8-12cm in inner diameter, 3-6mm in rind thickness and 13-20cm in length) of which one side is open and the other side is closed in the herb extract at 30-40deg.C for 1-3days and drying the treated bamboo tube in the shade; (iii) getting base rice by steaming sticky rice and black rice mixed in a ratio of 50:40-70:20, sticky foxtail millet and Indian millet mixed in a ratio of 5:5, 10-15% of bamboo sprout, 5-10% of tabasheer and 10-15% of Bambusae Calulis in Taeniam with the herb extract; and (iv) putting the base rice with 2-5% of sesame oil, 5-10% of salt baked in bamboo tube, 10-15% of black sugar and additives in the preprocessed bamboo tube and sealing up the tube with twofold Korean paper before steaming the tube filled with the flavored rice. |
