PURPOSE: A method for preparing beans into which vinegar with other vegetable juice are absorbed is provided to serve high quality beans containing various kinds of nutrients, active elements and vitamins. CONSTITUTION: The method includes the following steps of: (i) washing fresh beans with water and drying the cleared beans in the shade before putting the fully dried beans in an airtight container; (ii) getting juice of ginger, garlic, onion, green onion, pine needles and leek and mixing the juice with honey and resin and vinegar; (iii) pouring the well mixed vinegar into the container holding the beans to be immersed therein and sealing up the container; (iv) leaving the container for 3days to let the beans absorb the vinegar completely and pouring the vinegar into the container and leaving for 3-4days; and then (v) repeating the vinegar pouring process until the beans become saturated with the vinegar. |
