Provided is an edible composition which includes a first particulated gel and at least one other particulated gel that gel under the application of shear force. The first particulated gel is substantially unmixed with any other part or parts. Also provided is an edible composition that includes a particulated gel suspended in a continuous phase of a hydrocolloid gel. Processes for the preparation of such edible compositions are also included.
