PROBLEM TO BE SOLVED: To provide a starch sugar solution-purifying method excellent in stability of pH of processing liquid sugar and capable of being especially suitably used for purifying millet jelly, for the finish desalination processing of millet jelly particularly by using an ion-exchange resin. SOLUTION: A starch sugar solution is made to pass through a mixed bed- type ion-exchange resin tower 6 using a strong base anion exchange resin and a slightly acidic cation exchange resin. At the front stage, a desalination system where a single flooring-type strong acid cation-exchange resin tower 2 and a mixed bed-type ion-exchange resin tower 4 using both of a weakly basic anion exchange resin and a strong acid cation exchange resin are combined may be installed.
