HIGHLY RESISTANT GRANULAR STARCH

PROBLEM TO BE SOLVED: To provide a highly resistant granular starch that has proprietary and useful properties including high resistance to enzymes, dietary fibers, a proprietary molecular weight distribution, high melting point and high heat of gelatin negation that suggests excellent processing tolerance (ΔH). SOLUTION: These starches can be produced for example, by heating a high-amylose starch that contains at least 40 mass % of amylose in an amount of water insufficient for decomposing the grain-forming properties of the starch at the insufficient temperature and by digesting the amorphous area with α-amylase or a chemical reagent.
