PROBLEM TO BE SOLVED: To obtain a swine internal organ-originating angiotensin-converting enzyme inhibitor and provide a method of producing the same. SOLUTION: This substance is an angiotensin-converting enzyme inhibitory substance by degrading the swine internal organs with a protease as a food additive. In this case, the swine internal organs including at least swine livers and hearts are heat-treated to deactivate the endogenous protease, then the protease to be used as a food additive is used to degrade the organs whereby the objective inhibitory substance is obtained. |
