PROBLEM TO BE SOLVED: To provide a method for producing roasted peanuts excellent in flavor, texture and nutritive value, and having stable quality. SOLUTION: The peanuts with thin skins taken out from hard shells are immersed in water at 70-100 deg.C to soften and remove the thin skins. The obtained peanuts are roasted at 60-80 deg.C for 7-8 min, and further roasted at 110-120 deg.C for 12-13 min to provide the objective roasted peanuts. |
