Continuous sterilisation of individual fruit or vegetable products comprises feeding them in open containers (1) into an autoclave where they are sealed and steam is fed in to remove air and sterilise the products. The steam line (2) is then removed and pressure restored to atmospheric with sterile air or a protective gas. The products are then cooled , removed from the autoclave and put into packages (3) under aseptic conditions. An independent claim is included for equipment for carrying out the above process. -
