PURPOSE: A method for preparing a Cucumis korean pickle is provided, which is simple to prepare and has a long preservability at a normal temperature. CONSTITUTION: A method for preparing a Cucumis korean pickle comprises the steps of: (i) removing seeds and ovaries; (ii) soaking in a solution of salt in water for one day; (iii) removing water from salted Cucumis korean; (iv) preparing an additive for aging by mixing dregs of refined rice wine, brown sugar, refined rice wine, and seasonings in a ratio of 40%, 6%, 2% and 2% respectively; (v) mixing the salted Cucumis korean 50% and the additive for aging, and then leaving for 30 days; and (vi) packing in proper containers. |
