PROBLEM TO BE SOLVED: To provide an apparatus for drying in equipment for drying and smoking Fushi (dried and smoked fish meat) capable of readily carrying out the continuous feeding of a fuel and continuous combustion without requiring skill of an operator, improving the working environment and labor conditions and resulting in efficient drying of fish bodies. SOLUTION: This apparatus 20 for the equipment for drying and smoking the Fushi is obtained by converting a live fish body into slices of a prescribed size, heating the resultant slices utilizing water, boning the slices, housing the resulting fish body in a drying chamber, burning a fuel in a combustion chamber 12A provided under the drying chamber and drying the fish body with heat obtained thereby. A gaseous fuel is used as a fuel for drying. As a result, the continuous feeding of the fuel can be carried out without requiring the skill of the operator and the continuous combustion is facilitated by ignition with a burner, etc. The production efficiency is improved.
