摘要 PROBLEM TO BE SOLVED: To obtain an excellent edible oil-and-fat having functions to ameliorate lipids in blood, good in flavor and having low-temperature resistance and suitability to thermal cooking. SOLUTION: This edible oil-and-fat having functions to ameliorate the lipids in blood comprises oryzanol, a free type or a fatty acid ester type phytosterol and a free type or a fatty acid ester type triterpene alcohol. The content of the oryzanol is 0.8-4.0 mass % and the sum total of the free type or fatty acid ester type phytosterol and the free type or fatty acid ester type triterpene alcohol is 0.5-6.0 mass %. The sum total of the free type phytosterol and the free type triterpene alcohol is <=0.5 mass %.
