PROBLEM TO BE SOLVED: To obtain an antimicrobial agent having higher safety and capable of preserving foods, seeds, flower and ornamental plants, etc., for a long period and a solidifying agent for the foods, a soil fungicide and a growth inhibitor of vegetation. SOLUTION: This antimicrobial agent comprises one or more kinds selected from saccharides and a water-soluble calcium saccharate prepared by reacting an oxide or a hydroxide of calcium with an oxide or a hydroxide of magnesium containing calcium coexisting therewith in the presence of water. The method of retaining the freshness of the foods, seeds or flower an ornamental plants comprises using an aqueous solution of the water-soluble calcium saccharate. The solidifying agent for the foods, soil fungicide and growth inhibitor of the vegetation comprises the water-soluble calcium saccharate.
