PROBLEM TO BE SOLVED: To produce a rice-miso, etc., having a good flavor by preventing a contamination with a harmful microorganisms such as Bacillus, etc. SOLUTION: This rice miso is obtained by utilizing a malted rice obtained by inoculating lactobacillus and Aspergillus oryzae on steamed rice produced by steaming the rice immersed in a soybean extract liquid, and preventing the contamination by the harmful microorganisms by performing a lactic fermentation and production of a malted rice simultaneously, and soybeans obtained by the lactic fermentation for preventing the contamination with the harmful microorganisms. |
