PURPOSE: A deep fryer is provided to prevent a local overheating or breakage of a heat conduction pipe occurring due to failure of smooth vent, to lengthen the life span of a flame control plate, to restrain outflow of asbestos powder or ceramic powder to the atmosphere, and to avoid overheating or breakage of a motor by blocking up the transmission of heat through a motor shaft. CONSTITUTION: A deep fryer has a housing(100), a fry pot(103), a front plate, a control panel(112), a door unit, a drain guide assembly(130), and a support member(118). A burner(176), a heater(171) and a gas controller(181) are installed in the lower portion of the control panel. In the rear face of the housing, a ventilator and a ventilation pipe are installed. A flame control plate is prepared to define a range of flames of the burner. By making the flame control plate using a heat-resistant metal, production of noxious dust is prevented. As the life of the flame control plate is lengthened, inconvenience of frequent replacement of a flame control plate is removed. For improving heat exchange efficiency of the gas passing through the heat conduction pipe, a baffle plate and a swirler is inserted into the heat conduction pipe. The heat conduction pipe is connected to the ventilator. If gas is not smoothly discharged, gas supply to the burner is restrained to prevent local breakage or mal-function due to overheating of the heat conduction pipe. By interposing a heat insulating material in a split motor shaft, heat transfer through the shaft is avoided. Thus, overheating of a coil in a motor or failure of the motor is prevented.
