PROBLEM TO BE SOLVED: To provide a deep fryer with improved characteristics for heating an oil tank inside the fryer. SOLUTION: A thermal fluid fryer 10 carries food to be fried including a cooking channel 16 that is filled with oil 26 while being arranged in a tank- supporting frame 14 by a food conveyor belt 28 via the cooking channel. Oil is indirectly cooked by a heat exchanger unit 40 that is arranged vertically in the cooking channel. The heat exchanger unit 40 is formed as a continuous pipe 41 that can be manufactured and assembled relatively inexpensively. The heat exchanger unit is provided with an inlet manifold 43 and an outlet manifold 45. Thermal fluid is heated to a temperature that is further higher than that of surrounding oil in the heat exchanger unit. With this structure, the temperature range distribution of the oil 26 in a housing 12 of the fryer becomes uniform along the longitudinal direction of the housing.
