PROBLEM TO BE SOLVED: To provide the subject apparatus capable of stably carrying dough even when the dough which is highly hydrous and so soft as to be easily stretchable is rolled out, and to provide a method for controlling the apparatus. SOLUTION: This apparatus is such one as to comprise a pair of rolls to roll out dough, at least one of front and rear conveyors set before or behind the pair of rolls to support and carry the dough rolled out by the pair of rolls, at least one of front and rear sensors set between the pair of rolls and the front or rear conveyor to detect the height of the dough delivered to the pair of rolls, and a control unit to increase/decrease the revolutions of the pair of rolls according to the height of the dough detected by the rear sensor, and also increase/decrease the carrying speed of the front conveyor according to the height of the dough detected by the front sensor. The other objective method for controlling the apparatus comprises the above way afforded by the control unit. |
