PURPOSE: A freshness measuring agent of fruit and a method thereof are provided to measure freshness of fruit by measuring volatile material discharged in storing the fruit with mixing resazurin and yeast. CONSTITUTION: A mixture of resazurin and yeast is put in a transparent container, and stored with fruit in an airtight container. Blue resazurin and yeast mixed solution is changed into red, pink and decolorized with increasing the amount of volatile material such as alcohol discharged from fruit over time. The volatile material is not generated, and the color is not changed in not mixing resazurin and yeast or without fruit in the resazurin and yeast mixed solution. The freshness is detected with detecting the state of fruit by changing the color of the resazurin and yeast mixed solution in storing with the fruit in the airtight container, and the storage method of the fruit is decided according to the freshness of fruit.
