PURPOSE: Provided are soybean gruel containing lactic acid bacteria using soybean powder as a main ingredient and its preparation method. The soybean gruel is a kind of the glutinous gruel containing a great quantity of lactic acid bacteria as well as continuously maintains the nutrients such as protein, fat, saccharide and fiber of soybean useful for the prevention of adult diseases. CONSTITUTION: The soybean gruel is obtained by mixing 11 to 8 wt.% of soybean powder of a particulate form, 75 to 83 wt.% of purified water, 3 to 1 wt.% of banana flavor, and 6 to 4 wt.% of lactic acid, and then aging the mixture. Particularly, Its preparation method comprises the following steps: grinding selected soybean to form the particulate of 180 to 300 mesh in a size at 15 to 25 deg.C; adding 11 to 8 wt.% of the soybean powder and 75 to 83 wt.% of purified water into a mixing bowl and mixing homogeneously; heating to 95 to 97 deg.C with stirring, and then cooling at room temperature and keeping the temperature to 35-45 deg.C; and then adding 3 to 1 wt.% of banana flavor and 6 to 4 wt.% of lactic acid bacteria, and mixing the mixture thoroughly and then aging it for 20 to 28 hours. |
