PROBLEM TO BE SOLVED: To obtain edible oils and fats capable of stably dissolving and containing a vegetable sterol, having excellent heating and cooking suitability such as slight smoking in heating and cooking, slight foaming in cooking of fried food, etc. SOLUTION: The edible oils and fats comprise (1) 5-20 wt.% of a 8-10C medium-chain saturated acyl group in the whole constitutent acyl groups in oils and fats, (2) <1 wt.% of <=30 sum of carbon atoms of constitutent acryl groups and <15 wt.% of 32-38 sum of carbon atoms in trigylceride components and (3) <3 wt.% of monoglyceride, >=2.5 wt.% and <15 wt.% of diglyderide and >=85 wt.% and <97.5 wt.% of triglyceride in the whole glyceride components. |
