PROBLEM TO BE SOLVED: To provide a safe edible flour free from bitter taste and provide an edible flour giving smooth feeling to the palate. SOLUTION: The objective flour is produced by pulverizing chaff and/or unhulled rice, adding an alkali metal carbonate to the powder introducing the mixture into an extruder, subjecting to the mixing, shearing and pressure feeding of the mixture under high temperature and pressure condition, extruding through a die, drying the extruded material and pulverizing the dried product. The chaff and/or unhulled rice dried after extrusion through the die is pulverized to a powdery state having an average particle diameter of 1-30 μm. |
