PROBLEM TO BE SOLVED: To provide an antioxidative method for cooking a food, capable of applying a favorite scorching color to a proper part of food while controlling deterioration of lipid, etc., by heating. SOLUTION: A proper part of the surface of a food F is coated with 0.2% solution of glucose and the food is fed to a heating chamber to set the chamber in an oxygen-free state. Then superheated steam at 230 deg.C is introduced to the heating chamber and the food F is heated until a scorching is formed on the face 9 coated with the glucose solution. The obtained food F does not generate a harmful substance such as lipid peroxide, etc. |
