Novel arylpropionaldehyde derivatives and production and use of the same

Phenol derivatives (I), are new. Phenol derivatives of formula (I) are new. [Image] R1H or 1-4C alkyl; R21-4C alkyl; and R3COOH, CHO or CH2OH. Independent claims are also included for: (1) the preparation of 3-(3-methyl-4-hydroxyphenyl)-3-methylbutyraldehyde (Ia); and (2) the preparation of N-[N-[3-(3-methyl-4-hydroxyphenyl)-3-methylbutyl]-L-alpha -aspartyl]-L-phenylalanine methyl ester comprising reductive alkylation of (Ia) with aspartame.
