The drying device (10) has a thermally-insulated casing (14) with a closing door, a drying chamber (18) with air-permeable support surfaces (22), an adjustable entry opening (24) for fresh air (26) and an air channel (36) with a fan guided along the lowest part of the drying chamber. The entry opening, air channel and drying chamber form a closed air circulation system. The air circulation system has an integral heater (38), a cold part (42) with an adjustable bypass (44) and a drain valve (52). Independent claims are included for a method for drying foodstuffs using the device and for a method to desiccate foodstuffs using the device.
