PROBLEM TO BE SOLVED: To obtain a noodle containing hizikia seaweed (Hizikia fusiformis) in an inconspicuous state, servable even to a child disliking hizikia and easily eatable even by aged person as an iron-rich nutrient noodle food by mixing hizikia to noodles in the form of ultrafine powder having particle diameter of several tens micron or below, adding a milk fat to eliminate the characteristic smell of hizikia and optionally freezing the noodle to prevent the oxidation of the milk fat. SOLUTION: Ultrafine powder of hizikia having particle diameter of several tens micron or below is mixed in an amount of 2 pts.wt. to 100 pts.wt. of wheat flour, 3 pts.wt. of milk fat is added to the mixture to eliminate the smell of hizikia, proper amounts of albumen and saline water are added thereto and the obtained dough is kneaded, formed in the form of noodles and frozen to obtain the objective noodle. |
