PROBLEM TO BE SOLVED: To provide a process for producing a chilled food keeping the characteristic taste, flavor and palatability of the food raw material and preservable over a long period while simplifying the cooling of the food after the thermal sterilization treatment. SOLUTION: A food raw material containing a substance selected from acetic acid salts, glycine, polylysine and protamine is sealed in a container, subjected to thermal sterilization treatment and cooled to obtain the objective chilled food. |
