food industry. SUBSTANCE: invention relates to technology of production of dehydrated long-storage product. Mixture prepared from grated dried fruit, water, sugar, and roasted grated nut kernel is supplemented by ascorbic acid and lipid-containing extract of biomass of microorganisms Mortierella bainieri. Resultant mixture is boiled out until content of solids below 88%, shaped in hot state, cooled in cellophane film to ambient temperature, and packaged under vacuum in sealed containers. EFFECT: imparted adapting property and prolonged shelf life. |
