SUBSTANCE: duly prepared bananas are treated with aqueous solution of substance described by general formula: R1-[NHn-R4-n] in which R1 denotes jasmonamine, m=2-4, n=1-3, R denotes alkyl, and X mineral acid residue, in amounts from 0.5 to 1104 mg/t, ripened for 2-5 h, and peeled. Pulp is disintegrated to give juice and peel is subjected to acid hydrolysis. Hydrolysate is separated and blended with juice to give desired concentrate.
