A gear for removal of the heart 5 and lungs 6 from a carcass, which is cut open in the abdomen, chest and neck, comprises a tool which has a primarily V-shaped cut- out 3, which at the bottom of the V passes into a slit 4, whose end opposite the V is closed or narrowed. The gear has means of moving the tool upward with the V- shaped cut on top and the slit in a horizontal or slanted position, after which the tool is turned so that the V- shaped cut 3 will lie on one side and the slit 4 will assume a more slanted or horizontal position, after which the tool is moved downward. The gear is able to completely extract the heart and lungs, while the trachea and esophagus remain firmly in the carcass. Preferably the heart and lungs are pulled out from the body enough so that there is a partial loosening in the throat region, and the trachea and esophagus are pulled out from the body such that the mechanical tool can cut through them in the region of the larynx. <IMAGE>
