摘要 A novel process for producing dry instant soups and sauces wherein a specific sulfur-containing compound such as glutathione is added to a feedstock composition in any step during the production of dry instant soups or sauces containing vegetables, mushrooms, spices, etc. This process makes it possible to give dry instant soups and sauces wherein the inherent smells of the vegetables, mushrooms, spices, etc. can be enhanced and sustained stably over a long time.
