PURPOSE: A method for manufacturing pizza is provided to effectively ferment pizza crust for manifesting the color of pizza and easily forming the pizza. CONSTITUTION: The method comprises mixing(100) with wheat flour, water and other side ingredients; dividing(110) the dough into a bun size for making a pizza crust; lyophilizing(120) the dough at least under -20deg.C; thawing and fermenting(130) the lyophilized dough at room temperature for 4-5 hours; molding(200) the fermented dough as a pizza crust; topping(210) pizza sauce, cheese and other toppings; and baking(220) in a frying pan or oven.
