PURPOSE: A method for preparing hand made noodles by using wheat flour and a concentrated solution of apple is provided to serve fine and soft strip of noodles maintaining the chewy taste after cooked and being kept for about 2 years. CONSTITUTION: The method includes the following steps of: (i) mixing 95-98wt% of wheat flour with 1-2wt% of refined salt and 1-3wt% of apple concentrate and kneading the mixture with refined water before pressing and rolling the dough for an hour; (ii) forming the dough into thick circular shape and making the circular dough into thin shape before applying 0.01-0.03wt% of cottonseed oil and getting a pencil thickness of circular dough mass; (iii) aging the formed dough for 3hrs and first extending the aged dough with hands before secondary extending the dough after an hour to get strips of noodles; (iv) hanging the extended noodles on a drying frame and dehydrating the dough with a hot-air dryer with raising the temperature gradually; (v) cutting the dried noodles into a fixed length and sorting fine quality of noodles to be packed.
