摘要 dairy industry. SUBSTANCE: method involves removal of proteins from whey at 90-95 C by addition of coagulating agent taken in the amount 5-50% of mixture mass. Defatted milk or buttermilk with acidity providing pH value of medium to isoelectric point of proteins coagulation is used as a coagulating agent. Mixture is kept for 15-20 min and protein mass is separated from whey. Purified whey is condensed and lactose is crystallized. Lactose crystals are centrifugated and dried. Invention provides the possibility to use whey with acidity from 12 T to 85 T for production of lactose. EFFECT: enhanced degree of whey purification from proteins, increased yield of lactose. 3 ex
