PROBLEM TO BE SOLVED: To provide a food fermentation chamber in which the flow speed distribution and temperature distribution of air-conditioned air supplied to fermented foods are uniform. SOLUTION: Air-conditioned air is circulated and supplied to food fermentation racks 24 set in a wind tunnel 18 through a gas-mixing chamber 16. The fermentation heat-absorbed air in the wind tunnel 18 is mixed with air- conditioned air supplied from an airconditioning unit 22. Thereby, the air- conditioned air having a constant temperature can always be supplied into the wind tunnel 18. Straightening plates 26A, 26B can be set to both end opening portions of the wind tunnel 18 to uniform the flow speed distribution of the wind tunnel 18. Further, the direction of ventilation in the wind tunnel 18 can be changed for each prescribed time to uniform the gradient of temperature in the ventilation direction in the wind tunnel 18, thus wholly uniforming the gradient of the temperature. Thereby, the fermentation progresses of the fermented foods are equalized, and the uniform fermented foods can be produced. |
