PROBLEM TO BE SOLVED: To provide a new method for producing opened and dried fishes which stimulate the buying intention of consumers. SOLUTION: Opened horse-mackerels where internal organs have been removed are pickled for 8 to 12 m in brine having the salinity of about 12% in which bean curd lees-like solid matter (aloe curd lees) prepared by squeezing aloe green leaves and dehydrating them is thrown. Then, the opened fishes taken out of the brine are spread on a net, and the bean curd lees-like matter is sprinkled on the opened fishes. The fishes are made to be half-dried by warm air for around one hour and are vacuum-packed after the completion of getting them halfdried.
