PURPOSE: Provided is a method for manufacturing chicken cutlet which is frozen for transportation and, even after being thawed for eating, does not harden again while keeping the softness of chicken. CONSTITUTION: The method for manufacturing chicken cutlet is comprised of the next steps of: i) cutting chicken; ii) eliminating unnecessary parts of chicken and mashing the chicken pieces; iii) frying the pieces in animal oil for 40 minutes; iv) cooling the pieces; and v) mixing the chicken pieces with additives. The additives include 50g of onion, 50g of apple, 20g of ginseng, 30g of western mushrooms, 30g of potato, 50g of frying powder, 40g of bean, 10g of sesame, 5g of garlic, salt, glucose, baking powder, vinegar, mustard, and 5g of water. |
