PURPOSE: Provided is an apparatus for producing a fixed shape of dough pieces put into clear soup and cooked, which can mass produce the dough pieces having a shape same with hand made pieces and maintaining chewy taste easily. CONSTITUTION: The apparatus comprises an extruding machine(50) having a hopper placed at one side top of the body case(52) and supplied with dough mixed from a kneading device and a removing screw therein to be rotated by power of a motor for transferring and discharging the dough to one side, a forming part(60) installed at the front end of the extruding machine and including a couple of pressure rollers(64,64a) placed at the top and the bottom of the frame to be rotated by a power transmission device for pressurizing the discharged dough, a discharge nozzle(10) fastened to the front end of the body case of the extruding machine for discharging the dough with board shape having fixed width, and a dough piece shape of irregular pressure projection(20) placed along the surface of the pressure roller for forming the board shaped dough into a dough piece.
