PROBLEM TO BE SOLVED: To provide a patty or fried food or frozen product thereof wherein binder portions are soft and brittle so as to emphasize the granular feeling of a granular food material (ingredient). SOLUTION: This method for producing a heat-treated formed food containing a granular ingredient comprises the following steps: mixing a kneaded product made of a gel-like albumen emulsified product obtained by emulsifying albumen and oils and fats, and ground fish meat with at least one kind of granular ingredient selected from meat, fish and shellfish and cereals, forming the resultant mixture, and steam-heating the thus formed mixture to obtain a patty. The patty may be further cooked with an edible oil. Furthermore, the formed mixture subjected to the steam-heating may be coated with a batter and/or bread crumbs and cooked with an edible oil to obtain a fried product. As necessary, the above patty and/or fried product may be frozen. |
