PURPOSE: Provided is a method for preparing an Insam(ginseng) jam which is made of undried Insam(ginseng) or rootlets of Insam(ginseng) whose commercial value is low as main materials to make anyone take comfortably. CONSTITUTION: A method for preparing an Insam(ginseng) jam comprises the steps of: (i) a first step to wash Insam(ginseng), dewater, pulverize and/or cut finely; (ii) a second step to prepare 0.5-5% liquid pectin, add 0.1-4% organic acid, add sugar to 40-70brix, and add the prepared Insam(ginseng) materials 5-15%; (iii) a third step to heat the mixture at 60-80deg.C for 10-40 minutes to concentrate sugar content to 50-70brix; and (iv) a fourth step to cool the concentrated jam to 70-60deg.C, sterilize at 80-100deg.C for 5-15 minutes, and pack. |
