Device for removing the skin and fat layer from salmon fillets has a transporting device driven by a cogwheel (22). A cutter (16) is positioned above the wheel, leaving a small gap (28) between it and the edge (26) which leads to a channel (30) for the skin and fat. The width of the gap is adjustable.
