<p>A process for producing glycine characterized in that, in converting glycinonitrile into glycine while forming ammonia as the by-product by hydrolyzing an aqueous glycinonitrile solution in a hydrolysis system under the action of a microbial enzyme, the hydrolysis system contains an organic impurity compound inhibiting the microbial enzyme, which has a molecular weight of 95 or more and contains at least one member selected from the group consisting of nitryl group, carboxyl group, amido group, amino group, hydroxyl group and trimethyleneamine structure, and the hydrolysis is carried out under such conditions that the content of the above-described organic impurity compound inhibiting the microbial enzyme in the hydrolysis system is maintained at 10% by weight or less, based on the weight of the hydrolysis system, throughout the hydrolysis.</p> |
