PURPOSE: Provided are a method and apparatus for effectively preventing the degradation of oil to maintain freshness for a long time. CONSTITUTION: The prevention method of the degradation of oil is characterized by the steps of: injecting an inert gas into oil, such as edible oil, to make the inert gases to micro bubbles therein then dispersing them, wherein the oil is preferably circulated in a circulation furnace; the inert gases are injected through the circulation furnace; and impurities in the oil are preferably removed before injecting the inert gases.
