<p>PROBLEM TO BE SOLVED: To provide a method of producing dried vegetables which can reduce breakage by a simple operation and have practical effects such as an attractive appearance and also a wide application range as ingredients. SOLUTION: This method for producing dried vegetables features cutting raw material vegetables into pieces of appropriate size to blanch them, soaking the blanched vegetables in a protected oil liquid and then lyophilizing them.</p> |
