PROBLEM TO BE SOLVED: To provide a polyphase emulsion with outstanding stability. SOLUTION: This polyphase emulsion is obtained by passing a W/O emulsion through a porous membrane having a uniform pore diameter and dispersing this filtered emulsion into a water phase blended with a surfactant having an IOB values of 1.3 or more. In addition, the average particle diameter of the dispersed W/O/W emulsion particles is 0.1-30 μm.
