摘要 PROBLEM TO BE SOLVED: To provide a method for producing a clear liquor, by which the elusion of impurities, such as iron contents, contained in a diatomaceous earth filter medium and affecting the quality stability of the liquor into the liquor can be reduced, and further by which the stabilized diatomaceous earth filter medium can be formed to give the liquor, such as beer, having excellent clarity. SOLUTION: This method for producing the clear liquor by filtering the liquor fermented solution prepared by a conventional method with a diatomaceous earth filter medium, characterized by treating the diatomaceous earth filter medium with acidic water, washing the treated diatomaceous earth filter medium with water, and then using the washed diatomaceous earth filter medium for the filtration treatment of the liquor fermentation solution in a water-suspended state or wet state without drying the washed diatomaceous earth filter medium, especially carrying out the above- mentioned treatment of the diatomaceous earth filter medium with the acidic water just before the filtration treatment of the liquor fermentation solution, transferring the diatomaceous earth filter medium treated with the acidic water to a filtration carrier to form a filter layer on the surface of the filtration carrier, washing the filter layer with water, and then filtering the liquor fermentation solution. Thereby, the liquor, such as beer, having a stable quality and excellent clarity is obtained.
